Protein Cookie Dough Bark

I shared this recipe on my Instagram and it was a huge hit! It comes together in a snap and is the perfect afternoon sweet treat that won’t wreck your goals!

What you’ll need:

  • 2 cups of oats, blended in a mixer until more of a fine powder ( I use GF oats)

  • 1 scoop vanilla protein (I use EquipFoods - discount THEWELLNESSZENA)

  • ½ cup and melted and slightly cooled coconut oil

  • ¼ cup maple syrup

  • optional: 1 tsp vanilla bean paste or vanilla extract

  • pinch of salt

  • ¼ cup mini chocolate chips

Topping:

  • 1 cup or so dark chocolate, melted for the topping

  • Sea salt flaked on top of melted chocolate layer

What to do:

  • blend the oats and protein together into a fine powder

  • incorporate all the ingredients except mini chocolate chips, once combined fold them in

  • line a cooking sheet with parchment paper

  • evenly spread the mixture on the cooking sheet

  • melt dark chocolate chips (a little spoon of coconut oil helps to prevent burning)

  • pour it over the mixture, then sprinkle flakey sea salt on top

  • pop into the freezer until firm

  • cut up into pieces and store in a glass container in the fridge!
